An Order of Service, or an Order of Ceremony for a civil wedding,  shows your guests what will happen and in what order and in the case of a church wedding avoids the need to juggle service book, hymn book etc. by detailing music, hymns and psalms.
It can also give you the opportunity to name readers and soloists, and to list bridesmaids, Best Man, ushers etc if you wish and to record your thanks both to particular individuals or to your guests in general.
One copy per guest is ideal, plus one for the Minister and one for you as a keepsake.
